This sautéed garlic scapes recipe is a simple, flavorful way to enjoy this seasonal ingredient. Harvested in late spring and early summer, these curly green shoots offer a mild garlic flavor with subtle sweetness and earthy notes. The recipe uses just four ingredients—garlic scapes, olive oil, red wine vinegar, and salt—to create a quick and delicious side dish. Sautéed until tender and slightly crispy, the scapes are finished with tangy vinegar and salt for balanced flavor.
Preheat: heat a large heavy bottomed skillet or wok over medium heat. Once the pan is hot add olive oil and ensure bottom of the pan is fully coated.
Sauté: add the garlic scapes to the pan and cook for 5-7 minutes tossing or stirring them every 45 seconds. The scapes should be tender and crispy.
Toss: remove the pan from the heat. While still in the pan toss the scapes in the red wine vinegar, be careful it may sputter in the hot pan. Immediately sprinkle with the salt and give another good toss to ensure everything is coated in olive oil, vinegar and salt.
