Pink Vodka Gibson Cocktail

This Pink Vodka Gibson recipe is a fresh twist on the classic Gibson martini.   • 1 chilled martini glass

Ingredients
  

  • oz vodka
  • ½ oz dry vermouth
  • splash pink cocktail onion brine see note for recipe
  • 2 whole pink cocktail onions see note for recipe

Instructions
 

  • Prepare Garnish: Insert a clean toothpick through 2 pickled cocktail onions and set aside.
  • Mix: Pack a mixing glass with ice, add the vodka, vermouth, and cocktail onion brine. Stir until the mixture is very cold, about 30 seconds. Adjust portions of each ingredient to your personal taste preferences.
  • Serve: Strain the mixture into a chilled martini glass and garnish with prepared cocktail onions.

Notes

Pink Pickled Cocktail Onion Recipe: In a small saucepan, combine 1 cup rice wine vinegar, 3 tablespoons dry red wine, ¼ cup water, ⅓ cup sugar, 2 teaspoons salt, 5 peppercorns, 20 coriander seeds, and 2 whole cloves. Bring the mixture to a boil, stirring to dissolve the sugar and salt. As soon as it reaches a boil, remove it from the heat and pour the hot brine over the onions in a jar. If there’s extra brine, make sure to spoon the spices into the jar as well. Seal the jar and refrigerate for at least 2 days before using—these pickled onions get even better with more time.
