Ingredients
  

  • 250 grams red pearl onions trimmed and peeled
  • 1 cup rice wine vinegar
  • 3 tbsp red wine dry is best
  • ¼ cup water
  • cup sugar
  • 2 tsp salt
  • 5 peppercorns
  • 20 coriander seeds
  • 2 cloves whole

Instructions
 

  • Prep Onions: sterilize a 500ml mason jar or other heat proof container and trim and peel the red pearl onions. Pack the jar with the peeled onions.
  • Make Brine: add vinegar, water, red wine, salt, sugar and spices to a small sauce pan and bring to a boil. Stir the mixture as it heats up to dissolve the sugar and salt fully. Remove from heat as soon as it comes to a boil and pour over the onions in the jar. If you have extra brine, be sure to spoon the spices into the jar. Cover and place in the refrigerator for at least 2 days before using, the pickles are even better if left a few more days.
