Prep Onions: sterilize a 500ml mason jar or other heat proof container and trim and peel the red pearl onions. Pack the jar with the peeled onions.
Make Brine: add vinegar, water, red wine, salt, sugar and spices to a small sauce pan and bring to a boil. Stir the mixture as it heats up to dissolve the sugar and salt fully. Remove from heat as soon as it comes to a boil and pour over the onions in the jar. If you have extra brine, be sure to spoon the spices into the jar.
